I’m on a roll, two weeks of meal planning. And last week we actually did 4 out of the 5 planned meals.
Here is this week’s plan:
Monday: unplanned day, so whatever we feel like, possible take out.
Tuesday: Baked marinated fish with baked potato slices and asparagus. (We didn’t end up making this last week.)
Wednesday: Hubby is working late so the kids and I will go to my mom’s for dinner.
Thursday: Beef taquitos with veggies and dip
Friday: Prawn curry, basmati rice and asparagus
Saturday: Easy Crockpot Chicken and Stuffing with roasted Indian cauliflower
Sunday: Dinner with the in-laws.
I find that meal planning really helps me in a lot of ways. It makes grocery shopping easier as well as the cooking process because I always have all the ingredients on hand. It also eliminates the frustration I feel at 3:30pm when I’m asking everyone what we should have for dinner.
