Last week I didn’t get to my whole meal plan. My excuse? It was way to hot to cook in our 30th floor south facing apartment.
I’m determined to do better this coming week, so here is the proposed meal plan:
Monday – Leftover mania
Tuesday – Beef Taquitos with veggies and dip
Wednesday: Dinner at my mom’s
Thursday – Crockpot Chicken with Stuffing and Indian Roasted Cauliflower
Friday – Akni (Chicken, potato and rice dish) with spiced carrots
Saturday – Lentil Soup and Edamame
Sunday – Dinner with the in-laws

My place gets crazy hot too and the lady at the deli (I couldn’t face turning on the stove and needed inspiration) suggested roast beef sandwiches with au jus. I made a greek salad on the side and it was fabulous!
Ooh, sandwiches are a great alternative, thanks for the suggestion. I have a bunch of boiled eggs in the fridge, I could even make egg salad sandwiches. Good luck with beating the heat!
That all sounds great! I know it’s so hard to cook when it’s so hot. Popsicles have made it into our meal plan almost every day, oh dear! At least they’re homemade and sugar free!
