Thai Chicken Pizza

Pizza is usually a favourite for everyone. But instead of the regular toppings, why  not try something a little different for your next pizza night? One of our favourites is Thai Chicken Pizza. It’s so delicious and even the kids will eat it, (though they do pick off the sprouts sometimes.)

Ingredients for Thai Chicken Pizza:
-1 tbsp olive oil
-1 tbsp minced garlic
– large boneless chicken breast cut into small pieces
-1 tsp Mrs. Dash Seasoning
-1/2 tsp curry powder
-3 tbsp creamy peanut butter
-2 tbsp low sodium soy sauce
-1 tbsp water
-a couple dashes of cayenne pepper
– large thin crust pizza shell (you can also make your own)
-3 green onions, finely chopped
-5-6 mushrooms, sliced
– 1 cup grated mozzarella cheese
– 1 cup washed bean sprouts

Instructions for Thai Chicken Pizza:
1. In a pan, heat the oil. Add in the cut up chicken and minced garlic. Cook until the chicken is no longer pink.
2. Mix in your Mrs. Dash seasoning and curry powder until it’s all combined. Then set the chicken aside.
3. Preheat your oven to 325 degrees.  Put your peanut butter, soy sauce, water and cayenne pepper in a bowl. Mix it together until it’s creamy, it may take a few minutes.
4. Spread the peanut butter mixture on the pizza shell. Evenly sprinkle on the cooked chicken, mushrooms and green onions.
5. Then generously sprinkle the grated mozzarella cheese over the pizza.  Put the pizza on a baking sheet and put it in the oven to cook for about five minutes.
6. Once the 5 minutes is up, put your oven on broil. Watch for the cheese to start bubbling. Once it’s bubbling, take it out of the oven.

7. Spread bean sprouts over the pizza, slice it up, serve and enjoy.

I sometimes double up the recipe so that we have leftovers for lunch the next day, yum!

  1. This is very interesting. I wonder how my little one would like it considering she loves peanut butter. I have in my freezer two pizza shells – from Cioffi’s. Is the amount in this recipe for 2 shells or 1?

  2. Omg Thai Pizza is my favorite!! I make it with tofu instead of chicken… absolutely delicious!! I use siracha and honey to marinate the tofu, but I might give curry powder a try next time with some paneer to make an Indian version. Thanks for the inspiration! 🙂
