Starting on Monday May 1, the hubby and I doing an 8-week clean eating challenge. I’ll explain in another post as to why. I mention it in the weekly meal plan because I want it to be part of our family dinners.
Embarking on a challenge like this can be tough because there is a lot of preparation involved. I don’t want to be making two dinners every night, so I’ll be making clean and healthy meals that the whole family can enjoy!
Monday – Seasoned tilapia with green beans and baked yam fries
Tuesday – Lemon garlic chicken with greek quinoa salad
Wednesday – Salt and pepper shrimp with steamed broccoli and brown rice
Thursday – Coconut curry shrimp rice bowl from The Soup Solution
Friday – Homemade turkey burgers with baked fries and a green salad
Saturday – Leftovers
Sunday – Dinner with family
