It’s the first week of Spring Break meal plan. With the family on the mend we’re hoping to have a fun couple of weeks of outings, playdates and maybe a staycation or two. So their might be a couple more take-out options than usual, but that’s the beauty of vacation right? Here’s what’s scheduled this week:
Monday – Homemade Chicken Noodle Soup with bread
Tuesday – Lemon Garlic Chicken with a green salad
Wednesday – Parmeson Crusted Tilapia with carrots and dip
Thursday – Chinese Orange Chicken with rice and snow peas
Friday – Beef Koobideh from the Kabob House
Saturday – Ground beef nachos with all the fixings and guacamole
Sunday – dinner with family

Looks healthy and wonderful!! My kids love “Mexican” food at our house — not authentic Mexican, but our family’s version of tacos or fajitas. We use a lot of fresh vegetables, and good meats, to keep the meals delicious but reasonable in terms of calories. Your beef nachos are a great idea, and fresh guac can be heavenly to eat with them!
