Tuesday – Dinner at the Boathouse to celebrate my parents wedding anniversary!
Wednesday – Honey Mustard Baked Chicken with steamed broccoli
Thursday – Thai Chicken Pizza and carrot sticks
Friday – Steak with sautéed mushrooms and onions and mashed cauliflower
Saturday – Greek Quinoa with grilled chicken
Sunday – Dinner at MIL

I like the idea of mashed cauliflower. I hadn’t thought of serving it that way. I’ll do that tonight.
this week, I have made a big batch of chickpea curry and chicken korma. For the rest of the week, I will be eating salmon with some grains and roasted veggies, shakshuka, and Fridays are usually for leftovers or eating out 🙂
