Now that we are back from our fun family vacation in Penticton, it’s time to get back to reality and of course that involves cooking dinner. So here is this week’s meal plan.
Monday – Since we will have just gotten back on Sunday night and we won’t have grocery shopped, it’ll probably be a take out night
Tuesday – Chicken Tetrazzini with snap peas
Wednesday – Ground Beef Grilled Cheese Sandwiches and a green salad
Thursday – Homemade Chicken Strips and Yam Fries
Friday – One-Pot Taco Pasta with guacamole and nacho chips on the side
Saturday – Salt and Pepper Shrimp with sautéed brussels sprouts
Sunday – Dinner with family

I continue to marvel that you can plan meals one week at a time. My husband and I are now cooking for an elderly mother in law and a developmentally disabled brother in law, and we can’t seem to plan past the next meal. On our menu is lots of deli sandwiches (my brother in law likes it) and Italian food.
