Kulfi Popsicles

Growing up, whenever my mom brought out the kulfi for dessert, it was always considered a special treat. Cold, sweet and delicious, it was a family favourite. She doesn’t make it as often anymore, so I thought now would be a great time to revive it, especially because I get to be the taste tester.

I wrote down all the ingredients from my mom, which surprisingly were only a handful. I decided to put a little twist on it and make it into Kulfi Popsicles, using my new Vitamix to make the recipes as simple as possible!

Ingredients:

– 2 cans of evaporated milk
– 1/2 tsp of ground cardamom (my mom recommends grounding them fresh)
– 3 to 4 tbsp of sugar, depending how sweet you like your desserts

Instructions:
1. Put the three ingredients in your blender in the order above. Blend until it completely mixed through.

2. At this point I started pouring the mixture into the popsicle mould. I found the spout on the Vitamix so helpful for this and nothing extra spilled out!
My mom however, says that I missed a vital step to bring out even more flavour, so I have to share it. Pour the mixture into a pot and bring it to a boil on medium heat. Then let it simmer for a couple of minutes.
Now I haven’t tried it yet, but you can also blend things in the Vitamix for a longer period to get them warm. Next time I make the Kulfi Popsicles, I’ll be trying that feature!

3. Then pour it into your moulds. I made 8 popsicle moulds and two mini muffin trays full of kulfi. The mini muffins are a perfect size to serve to guests as a dessert once they are frozen. Just put 4-5 five in a bowl and dessert is served.

4. Put everything into the freezer for a few hours. After that, they are ready to eat.

These are so delicious that I actually had to eat two in one sitting! Next time I’ll have to share my mom’s extra amazing Lychee Kulfi Recipe.

  1. This s actually a really easy recipe you have there, even though summer is coming to end in the US its still really hot here. I’m def going to give these a try. Thank you for sharing such an easy recipe.
