Monday – Akni and cucumber slices
Tuesday – Seasoned Tilapia with sautéed brussels sprouts
Wednesday – Slow cooker beef and broccoli with steamed rice
Thursday – It’s my birthday so I’ve asked for take out from one of my favourite places, the Kabob House and an ice cream cake for dessert!
Friday – Sweet Potato and Chicken Casserole
Saturday – Gluten-free pizza with celery and dip
Sunday – Dinner at my MIL
I’ve left the weekend to be really easy since I’ll be away.

Well, your Wednesday and Friday menu items look especially good – and Happy Birthday on Thursday! (Just celebrated mine today!) I’m not sure what my week’s menu plan will be yet!
The menu looks interesting. Happy birthday for Thursday. I still haven’t tried sweet potato. Found out the other day that its a vegetable rather than a starch, so it must be better for you.
