I didn’t know this as a child, but apparently I love pumpkin! Pumpkin muffins, pumpkin bread, pumpkin pancakes and even pumpkin spiced lattes. So for the last little while I’ve been experimenting with pumpkin puree’s in my regular recipes. This recipe for Pumpkin Waffles turned out so delicious that I had to share it.
Pumpkin Waffles
Ingredients:
– 1 cup of four
– 3 Tbsp sugar
– 1/2 Tbsp baking powder
– 1 tsp cinnamon
– 1/4 tsp all-spice
– 1/4 tsp salt
– 3/4 cup milk
– 1 egg
– 3 Tbsp olive oil
– 1/2 cup pumpkin puree
– 1/4-1/2 cup chocolate chips (optional)
Instructions:
1. In a large bowl, combine the flour, sugar, baking powder, cinnamon, all spice and salt with a whisk.
2. In another bowl, mix the milk, egg, olive oil and pumpkin puree. Then combine the wet ingredients into the dry ingredients.
3. This is were you can add the chocolate chips if you like. Or you can do what I did and that is to cook the first half of the batter as is and then add chocolate chips in the second half for all the chocolate loving toddlers in your house.
4. Heat your waffle iron and cook as per instructions. I used about 4-5 spoonfuls of batter in each waffle. This made five big round waffles. And they tasted perfect with some maple syrup and a cold glass of milk!
